The widely admired wines of Chablis<\/strong> (89 Yonne. BFC<\/span><\/em>) come from the northernmost part of Burgundy. Exclusively white wines made from Chardonnay these are crisp and minerally dry wines in a range of qualities. The chalkland countryside of the area is attractive with the Chablis <\/strong>wine village <\/strong>(89 Yonne, BFC<\/span><\/em>) at its heart – and yet only an hour or so south of Paris<\/strong> down the A6 autoroute (about 2 hours from Paris Charles de Gaulle airport).<\/p>\n\n\n\n

This charming wine village, full of character and interest has a weekly market in the village centre on Sundays. – in May there is a wine fair and flower market<\/a> in the village.<\/strong><\/p>\n\n\n\n

Burgundy white wines of outstanding quality, the wines of Chablis are made from one single varietal: Chardonnay. They are sub-divided into four appellations:
Petit Chablis
Chablis
Chablis Premier Cru
Chablis Grand Cru

These are identified by precisely delimited production zones, and are subject to strict production regulations. Logically, the higher up the hierarchy, the tighter these regulations.

Chablis wines are dry white wines which are characterized by thei<\/a>r purity, crispness, sophistication and minerality. The Chardonnay varietal gives results in Chablis unlike anywhere else. It draws its personality and character from a subsoil that is 150 million years old, and ripens in ideal conditions, in a semi-continental climate, which allow it to attain a good balance between sugar levels and acidity.
