When in 2017, chef Michael Caines bought Lympstone Manor his ambition was to develop a great hotel and restaurant, but he could also see the potential of the surrounding farmland. overlooking the River Exe to cretate a vineyard for producing an English sparkling wine. Over 17,000 vines were planted and after five years, the first vintage will soon be ready.. In the meantime, he has created a Michelin-starred restaurant and a 21 bedroom hotel!

The site was chosen as perfect for the Pinot Noir grape, which is ideal for an Englsh Sparkling wine! As the climate improves for UK wine-making, England can now produce some of the best sparkling wines to rival other premium areas.
The Lympstone Manor vineyard has been planted with the classic grape varieties of Champagne: Pinot Noir, Pinot Meunier and Chardonnay.
The Wine Room is where guests can learn, taste and explore the wine list in the company of knowledgeable sommeliers.The cellar now has over 600 bins representing some of the finest wine estates from around the globe. This includes mature vintages from the great wine regions of Europe as well as wines from the New World.
