The owners of Champagne Collery have revived a century-old Champagne house. The terroir of Aÿ, a hillside on the Montagne de Reims on some 360 hectares mostly planted with Pinot Noir, has a wide variety of expositions and elevations.Here the wines are assembled from the different Grand Crus of Ay, meticulously selected for their aromatic qualities. The approach blending allows the house to build distinct wines that reflect the different approaches to grape varieties and winemaking. In addition to the blends (brut, extra brut and rosé), the House also produces a Blanc-de-Blancs and a Blanc-de-Noirs, and Vintage Champagnes.
